Here’s a little something I whipped up to feature Mount Gay XO. It’s a really lovely rum that sips fine, but in my opinion serves better as a backbone for some great drinks.
This drink is inspired by the venerable Piña Colada, with the addition of Passion Fruit, Lemon, and Honey to take on the more floral aspects of the Mount Gay XO.
No, the flower in the picture isn’t edible, and is possibly poisonous, but it damn sure is pretty.
Bimbolada
- 2 oz Mount Gay XO
- 1 ½ oz Coconut Cream (Coco Lopez)
- 1 oz Honey Mix
- 1 oz Pineapple Juice
- ¾ oz Passion Fruit Syrup (Finest Call)
- ½ oz Lemon Juice
Blend with 1 cup of crushed ice until smooth. Pour into Large Goblet or Hurricane Glass. Garnish with mint and edible flower, serve with a wide straw.

That flower is almost certainly poisonous!
Blair, does anyone around here sell Finest Call passion fruit syrup, or did you have to order it?
I found it at Cash ‘n Carry over in Delta Park, not sure where else might have it.
You could always use Looza PF nectar and sugar to make a syrup, which works pretty well.
I agree with Tristan. That doesn’t look like an edible flower to me. But maybe it is edible, I’m certainly not qualified to say. It raises an interesting question though: What sorts of flowers make attractive, non-toxic accoutrements for tiki drinks?
as far as edible flowers go, I asked Martin Cate and he let me know that Sysco has an edible orchid bag of 100 as part of their catalog.
How you get ahold of these? Find your local friendly restaurateur or food supply that works with Sysco and see if they can order them in, I suppose.
On edible flowers:
Nasturtiums and Pansies are pretty easy to grow and both edible. In the short term, lots of produce suppliers sell boxes of ‘petal confetti’ which looks great mixed into long drinks.
Speaking Coco Lopez, how long does it last after opening the can, in the refrigerator, of course?
Nice photo Blair! That flower is definitely poisonous and I highly encourage you to continue using them for garnishes.
