the Bacon is cooked but still tender. I wanted a bit of that smokiness, char, and cooked fat flavor. Raw Bacon I suppose would work just fine. I think the Bacon Salt might make the Vodka too much for anything other than a Bloody Mary, but perhaps a Dirty, Porky Martini wouldn’t be too bad at all either.

New Seasons! There’s always something unique and interesting there, like when they had DragonFruit, or Passion Fruit, I even recently found some Pomellos (and plenty of them) to play around with.

Where did you find the seville oranges? I just put up my Curacao that I used regular dried orange rind. I’d love to make another batch using the more accurate orange!

This may be a silly question, but is the bacon cooked or raw when infusing it with the vodka?

If you used the bacon salt, would the ensuing infusion be too salty for a cocktail if you wanted to use it for something other than a Bloody Mary?
